Beef basturma (cut 50 g)
Basturma is a traditional dry-cured dish of nomads. This treat has been known since ancient times; even during the campaigns, Genghis Khan’s warriors consumed a product whose description is similar to basturma. The beef delicacy is a snack that reflects Kyrgyz traditions and identity. The dish consists of dried thin slices of meat of a rich dark red color. The cooking process gives the meat a fairly salty taste, which is balanced by the bright spicy notes of cumin and black pepper. The delicacy is smoked and dried in a yurt, after which it acquires the incomparable aroma of a fire, enhancing the umami taste. The dense texture of the meat, coupled with the seasonings, leaves a pleasantly rich aftertaste, like a gastronomic wonder.
