Kurdyuk is traditionally considered a delicacy, which in nomadic culture is served to honored guests and matchmakers at celebrations. Having an incredibly delicate texture and characteristic taste, this dish has become widely known and desired. Smoked fat tail is prepared by salting for two weeks using spices (2 types of pepper, bay leaf), followed by boiling, smoking and rolling in spices. Red paprika, garlic and smoky aroma give this treat an even more multifaceted taste and aroma.
