Horse meat chaar

Chaar is a delicious meat delicacy, shaped like a large salami. However, unlike the latter, the process of preparing chaar is slightly different. We use only brisket meat, which is cut into thin slices and, when stuffed into a casing, placed in layers, alternating layers of fat and premium horse meat, which gives the future chaar a deep, rich taste with spicy notes and a delicate, light sweetness. Afterwards the delicacy is aged for 100 days. The result is a treat with a rich flavor and multi-dimensional texture, with a slightly marbled pattern on the cut.
